Taittinger Prélude is a very interesting Champagne. Produced by the famous house in Reims from a careful selection of the best Chardonnay and Pinot Noir grapes, sourced from villages classified as Grand Cru and with a 5-year aging period in the cellar. A Champagne of great balance, the equal blending of the two grape varieties simultaneously ensures the vibrant minerality of Chardonnay and the aromatic intensity of Pinot Noir. In addition, despite its long bottle aging, Prélude retains a remarkable freshness and the perfect mix of refinement and complexity. In the glass, it is a beautiful pale yellow color with silver accents. The effervescence is delicate and elegant, resulting in a creamy and persistent perlage. The nose is subtle and fresh, with an initial mineral hint that quickly turns herbaceous, amid elderflower and spicy notes. In the mouth, it is sharp and vibrant, dominated by citrus notes. Then it becomes round and silky, revealing notes of white peach syrup. The finish is long, rich and explosive. Prélude is perfect as an aperitif but also proves a perfect accompaniment for classic seafood dishes. Try it with a tasty fry of small fish or with a poor fish grill.
