Sauvignon yes, but Wild. This intriguing Greywacke label represents the modern, fragrant style of New Zealand's finest Sauvignon. In this case, the grapes come from vineyards in the southern valleys of Marlborough and the central plains of Wairau. We are in the heart of the Sauvignon production area, thanks to a cool climate and good temperature swings between day and night. Harvested partly by machine and partly by hand, the grapes are gently pressed and the resulting must is racked into mostly used French oak barrels. Fermentation, using indigenous yeasts, continues for well over 6 months. The wine is then left in contact with its fine lees for a further eight months before being bottled. The result is a wine characterised by a beautiful bright straw yellow colour. On the nose there is a rich bouquet of ripe fruit and floral notes with hints of brioche, citrus peel and lemon. In the mouth, on the other hand, one discovers a pleasantly enveloping and fresh wine, with a rich fruity finish that soon entices one to take another sip.
