Glera vines in the province of Trieste are rare that boast the special mention Prosecco DOC Trieste. From one of these comes Millesimato Extra Brut Audace, the first Prosecco DOC Trieste aged in the waters of the upper Adriatic - in the Gulf of Trieste. The name is evocative of the famous Trieste pier called 'Audace' in memory of the landing of the first Italian military ship, the famous destroyer. This walkway suspended over the sea is now one of the most famous in Italy and the privileged stage of the world's largest sailing regatta, the Barcolana. A production limited to 6,492 bottles, this interesting wine matures at a depth of 20 metres, with extraordinarily peculiar parameters of temperature, salinity, concentration of dissolved oxygen, presence of phosphates, silicates, nitrites, nitrates and chlorophyll. All these natural parameters change with the seasons and the passage of the winds, guaranteeing Audace Trieste's unique taste and character. In addition, the Bora and Scirocco generate significant sub-inertial oscillations that contribute to the continuous movement of the bottles. This continuous rocking ensures a very special evolution of the wine. 100% Glera, the grapes are cooled before and during pressing to preserve freshness and varietal aromas. The second fermentation then continues for around ninety days in autoclaves. The result is a Prosecco rich in character, dry and iodised. Straw yellow in colour with green highlights, the perlage is extraordinarily fine and compact. On the nose, white flowers and fresh white-fleshed fruit. In the mouth, however, each sip reveals a strong personality and an unprecedented minerality. This is certainly due to the Glera grapes, grown in the Karst area in the province of Trieste. Excellent as an aperitif, it is a perfect bubbly to accompany the entire meal. Perfect with shellfish and seafood dishes.

We are in the heart of one of the most interesting areas for wine production in all of New Zealand. Marlborough is a land of great international wines, including the noblest of all reds, Pinot Noir. Babich Wines offers it here in a version produced using traditional winemaking techniques, including fermentation in open vats and manual punching. Maturation in French oak for 7 months then gives it a definite softness on the palate and a full flavor. In the glass, it is a beautiful ruby red color that is not overly deep. The nose reveals classic ripe fruit aromas, with a hint of smokiness resulting from aging in wood. In the mouth it surprises with the richness and finesse of its aromas that again recall ripe fruit, but also dried herbs and a hint of caramel. Soft, medium-textured, has a pleasant persistence. An elegant red that can also be paired with fish dishes, perhaps in guazzetto or otherwise cooked with tomato.

A talented young winemaker is the mastermind behind this The Party, a fascinating Malbec offered by Bodega Matias Riccitelli. We are located in Argentina's renowned Valle de Uco, where vineyards touch 1,500 meters above sea level. This particular wine region is characterized by a unique terroir, with an ideal climate for ripening Malbec grapes, resulting in wines of great structure and elegance. Harvesting is done manually between mid-March and the first week of April, using small 20-kg crates to preserve the integrity of the grapes. About 40 percent of the production is vinified from whole clusters without destemming, and alcoholic fermentation takes place in open concrete tanks with indigenous yeasts and at temperatures between 26 and 28 degrees. Two punching-downs are carried out daily. At the end of processing, the wine is aged in cement tanks for about 8 months. The Party shows a beautiful ruby red color of medium intensity in the glass, with aromas of red fruits and floral notes. In the mouth, the wine proves fresh and elegant, thanks to its excellent acidity. Perfect with medium-aged cheeses, as well as pasta dishes dressed with tomato-based sauces and red meats. An "oenological" experience to absolutely try.

La liebre y la tortuga, or the hare and the tortoise, is not only a famous children's fairy tale but also a beautiful aromatic white made from 100 percent Albariño grapes from the best vineyards in the Condado region. We are in Galicia, in the far north of the Iberian Peninsula, a few kilometers from the Atlantic coast. In this case we are in the innermost part of the DO Rías Baixas, with a moderately warmer climate than that found on the coast. The soil is composed of granite and slate that allow the grapes to fully ripen. They are hand-picked in the morning to preserve aromaticity and freshness as much as possible. The must is fermented using yeasts that enhance its primary varietal aromas and is then cold stabilized and filtered. La liebre y la tortuga presents itself in the glass with a classic straw yellow color with greenish reflections. It is a refreshing and pleasantly fruity wine. The mouth reveals beautiful acidity and intense aromaticity. Raw fish, oysters and seafood are natural pairings for this fun Galician white.

A fascinating wine that draws its unique characteristics from the skillful combination of grapes from two distinctive areas of Lujan de Cuyo, Argentina. Specifically, those harvested from the Perdriel estate, located on the banks of the Mendoza River, benefit from stony, clay soils with patches of caliche. Those from Gualtallary, at 1400 meters above sea level, grow instead on limestone soils. This combination of different terroirs results in a wine that expresses a perfect harmony between "sucrosity and freshness." Spontaneously fermented in small cement vats, for maturation the winemaker uses used French oak barrels, giving the wine complexity and structure. Wonderful aromas of wild dark fruits, vanilla and chocolate on the nose. In the mouth, complex and rich, with soft, ripe tannins and a long, enveloping finish. To put it at ease on the table, just pair it with savory grilled lamb or beef dishes.

Simply Chardonnay. Vigne Verdi, a brand owned by the Serena family, offers pleasant, well-made wines, the result of careful processing of grapes from various plots. Chardonnay, in particular, is undoubtedly a grape variety that needs no introduction. Versatile by nature, it always gives birth to wines characterised by a certain elegance. In this case, the processing is super careful and only involves the use of thermoregulated steel containers, in order to make the most of the fresh fruit characteristics typical of the grape variety. Pale straw yellow in colour with greenish highlights, the nose reveals a delicate and fragrant bouquet. Green apple, bread crust and a hint of sage. In the mouth, however, it is dry, with good flavour and decidedly drinkable. Recommended with delicately flavoured hors d'oeuvres, it goes well with fish dishes. Try it with a spaghettino alle vongole (spaghetti with clams), in white, with a little fresh parsley as garnish.

The level of quality achieved by Spanish producers in recent years is there for all to see. Thanks to its unique climate and environment, the Iberian Peninsula is, along with Italy and of course France, the nation with the richest ampelographic heritage in the world. Hundreds of typical Spanish varieties are used to produce red wines, fortified wines but also fabulous sparkling wines. Like this Onaya De Don Cristo, a Cava, as the Iberian bubbles are called, made from Macabeo, Xarello and Parellada grapes. A classic method sparkling wine, proposed here in the Brut version, therefore pleasantly dry but not extreme. Vinification in stainless steel for the sparkling wine base, which is then elaborated in the bottle for a period of about a year, achieving a good complexity without losing its immediacy and ease of drinking. In the glass it has a beautiful golden yellow colour, with a fine and persistent perlage that gives life to a soft and compact foam. The nose has a fresh and fragrant bouquet, with notes of citrus fruits, white pulp fruit and a subtle but unmistakable hint of yeast. In the mouth, however, it is immediately pleasant and delicate. The perfect correspondence with what was previously perceived makes this interesting Spanish sparkling wine the perfect companion for aperitifs and simple fish dishes. For a local pairing, we recommend trying it with a classic Catalan-style lobster, with fresh tomatoes, onion and lemon. Simply unforgettable!

Legend has it that the wines of Huentala Wines' Gran Sombrero line are dedicated to the big hat of the company's founder, Julio Camsen, son and grandson of a long tradition of winegrowers in Mendoza. Matured for a good 14 months in French oak barrels, after bottling this wine rests for at least another year in the cellar before being put on sale. This long period of ageing is necessary to make the Malbec from the vineyards of the picturesque Gualtallary valley more harmonious. In the glass, it has a beautiful deep and compact red colour, with clear violet hues. The nose reveals elegant and complex aromas, with distinct varietal character. It is easy to distinguish, for example, plums, blackberries, strawberries, currants, as well as floral notes of violets and dog roses. Over everything, then, a delicate and elegant spicy note that recalls the passage in wood. In the mouth, finally, this wine reveals well-smoothed tannins and balanced acidity. The finish is long and fruity.
