In addition, the Bora and Scirocco generate significant sub-inertial oscillations that contribute to the continuous movement of the bottles. This continuous rocking ensures a very special evolution of the wine. 100% Glera, the grapes are cooled before and during pressing to preserve freshness and varietal aromas. The second fermentation then continues for around ninety days in autoclaves. The result is a Prosecco rich in character, dry and iodised.
