Glera vines in the province of Trieste are rare that boast the special mention Prosecco DOC Trieste. From one of these comes Millesimato Extra Brut Audace, the first Prosecco DOC Trieste aged in the waters of the upper Adriatic - in the Gulf of Trieste. The name is evocative of the famous Trieste pier called 'Audace' in memory of the landing of the first Italian military ship, the famous destroyer. This walkway suspended over the sea is now one of the most famous in Italy and the privileged stage of the world's largest sailing regatta, the Barcolana. The second fermentation then continues for around ninety days in autoclaves. The result is a Prosecco rich in character, dry and iodised. Straw yellow in colour with green highlights, the perlage is extraordinarily fine and compact. On the nose, white flowers and fresh white-fleshed fruit. In the mouth, however, each sip reveals a strong personality and an unprecedented minerality. This is certainly due to the Glera grapes, grown in the Karst area in the province of Trieste.
